2 Chicken Breasts
1 tbsp Curd
1 tsp Chilli powder
1 tsp Tandoori masala
1 tsp Garlic powder
Salt to taste
100 gms Pureed Cottage cheese
2 cubes Grated cheese
8 cloves Garlic cloves, finely chopped
1 cup Fresh spinach, finely chopped
1 tsp Red chilli flakes
¼ cup Melted butter
1 tbsp Coriander, finely chopped
Preheat oven to 180°C.
In a small bowl, take curd, chilli powder, tandoori masala, garlic powder, salt and mix.
On a cutting board, take the chicken breasts and slit in the middle. Make small gashes on top and bottom sides of the chicken breast.
Rub the curd mixture everywhere on the chicken breast. Set aside for marinating.
In another bowl, take pureed cottage cheese, grated cheese, half of the garlic cloves, fresh spinach, red chilli flakes, salt and mix well.
Spoon this mixture into each chicken breast evenly. Take care to press down the sides of the chicken breast.
Place the chicken breasts in a baking tray.
In a small bowl, take the melted butter and add the remaining garlic cloves and coriander to it. Mix and put on top of each chicken breast.
Bake for 20-25 minutes or until chicken is easily pierced with a fork.
To puree cottage cheese, blend it in a mixer using as little water as possible.
