In this video I share my step-by-step Ramadan food preparation process for snacks to freeze. I make samosas, spring rolls and a variety of kebabs.

Samosa filling ingredients:
– ~1.5kg Mince (I used lamb mince)
– 1.5kg Potatoes
– 4 Medium Onions
– 7 Garlic Cloves
– 2 Chillies
– 3 tbspns Ginger
– 1/2 cup Sunflower Oil
– 2 tins Chick Peas
– 4 Tomatoes
– Juice of 1 lemon
– 1/2 cup Tamarind Sauce
– 1 tbspn each of Salt, Red Chilli Flakes, Ground Cumin and Coriander Powder
– 3 cups Frozen Mixed Veg

Samosa dough ingredients:
– 10 cups Plain Flour
– 1 cup Oil (I mixed Olive oil and Sunflower OIl)
– 1.5 tbspn Salt
– 1 tbspn Coarse Black Pepper
– 4 cups Water

Chapli Kebabs ingredients:
– ~1.5kg Mince (I used lamb mince)
– 3 Medium Onions
– 3 Tomatoes
– 3 Eggs
– 1.5 cup Gram Flour
– 7 Garlic Cloves
– 2 tbspn Ginger
– Juice of 2 Lemons
– 1/2 cup Chopped Coriander
– 1.5 tbspn Salt
– 1 tbspn Red Chilli Flakes
– 1 tspn Haldi (Turmeric Powder)
– 1 tbspn Ground Cumin
– 1 Chilli

Chicken mince & veg spring roll filling ingredients:
– 1 kg Chicken Mince
– 2 cups Frozen Mixed Veg
– 4 Spring Onions
– 1 tbspn Sunflower Oil
– 3 Tomatoes
– 1/2 tbspn Salt
– 1 tspn each of garlic powder, red chilli flakes & garam masala
– 3 tbspns Lemon Juice
– 1 Chilli

Chicken kebabs ingredients:
– 500g Chicken Mince
– 1 Red Onion
– 3 Garlic Cloves
– 1 tbspn Ginger
– 1 Chilli
– 1 Tomato
– 1 tbspn Lemon Juice
– 1 Egg
– 1/2 cup Gram Flour
– 1/4 cup Chopped Coriander
– 1 tspn Mint Sauce
– 1 tspn Salt

    Further to my comment yesterday I'm making the samosas right now. The mixture smells yummy..im using ready made pastry but next time I will make it I'm just not as good as you with pastry. Btw did you fry the samosas or oven roast them with oil coating? Never made samosas at home so excuse my questions . Thanks. Happy Friday Ramadan.

    omg i love you, just saw you on youtube (obviously :P) and loved this video, i want to try to make some of them, I'm in Australia and have a friend doing Ramadan, i bet she wishes she did this too, just wondering tho, what do you mean by snacks, my understanding is that you fast for a length of time each day, she has explained to me, or do you just mean snacks as in easy meals to eat during this month of Ramadan. i need to watch some more of your videos they look great from the pics.
